Description
A delightful and comforting dish that combines seasoned chicken and fluffy basmati rice all cooked in one pot.
Ingredients
- 1½ cups uncooked basmati rice
- 6 chicken thighs
- 1½ tsp mixed herbs (or Italian seasoning)
- 2 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 Tbsp olive oil
- 1 cup chopped onion
- 1 Tbsp butter
- 3 cups low sodium chicken stock
- Salt and pepper to taste
- ½ cup green onions for garnish
Instructions
- In a bowl, mix smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper.
- Rinse the basmati rice under cold water until clear and set aside.
- Coat chicken thighs with the seasoning mixture.
- Heat olive oil in a large pot over medium-high heat and sear chicken thighs for about 3 minutes on each side until golden brown.
- Remove chicken and set aside. Sauté chopped onions in the same pot until translucent. Add butter and stir until melted.
- Add the rinsed rice and toast for 1-2 minutes.
- Pour chicken stock over the rice, add reserved seasoning, deglaze the pot, and adjust seasoning.
- Place chicken thighs on top of the rice, cover, and cook on low-medium heat for 15-20 minutes.
- Garnish with green onions, let stand for 3 minutes, then fluff rice and serve.
Notes
Sear chicken properly for added flavor. Adjust cooking times and rice types as necessary.
