One Pot Chicken and Rice

Description

A delightful and comforting dish that combines seasoned chicken and fluffy basmati rice all cooked in one pot.


Ingredients

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1½ tsp mixed herbs (or Italian seasoning)
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 Tbsp olive oil
  • 1 cup chopped onion
  • 1 Tbsp butter
  • 3 cups low sodium chicken stock
  • Salt and pepper to taste
  • ½ cup green onions for garnish


Instructions

  1. In a bowl, mix smoked paprika, mixed herbs, garlic powder, onion powder, salt, and pepper.
  2. Rinse the basmati rice under cold water until clear and set aside.
  3. Coat chicken thighs with the seasoning mixture.
  4. Heat olive oil in a large pot over medium-high heat and sear chicken thighs for about 3 minutes on each side until golden brown.
  5. Remove chicken and set aside. Sauté chopped onions in the same pot until translucent. Add butter and stir until melted.
  6. Add the rinsed rice and toast for 1-2 minutes.
  7. Pour chicken stock over the rice, add reserved seasoning, deglaze the pot, and adjust seasoning.
  8. Place chicken thighs on top of the rice, cover, and cook on low-medium heat for 15-20 minutes.
  9. Garnish with green onions, let stand for 3 minutes, then fluff rice and serve.

Notes

Sear chicken properly for added flavor. Adjust cooking times and rice types as necessary.
