Description

A delightful and convenient meal option that combines all the flavors of a burrito into a single dish, perfect for busy families.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey or ground beef
  • 1/2 green pepper, diced
  • 1/2 sweet onion, chopped
  • 1/2 teaspoon garlic, minced
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can tomatoes with green chiles
  • 2 cups chicken broth
  • 1 cup minute brown rice
  • 1 1/2 tablespoons taco seasoning
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 cup cheese (optional)
  • Optional toppings: tortilla chips, salsa, lettuce, sour cream, guacamole, tomatoes, green onions, jalapeños


Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onions, diced green peppers, and minced garlic to the pan. Sauté for about 2-3 minutes or until the onions turn golden brown.
  3. Add the ground turkey or ground beef to the pan. Cook until the meat is browned and drain any excess grease.
  4. Stir in the rinsed black beans, drained corn, and can of tomatoes with green chiles. Combine well.
  5. Add the minute brown rice, taco seasoning, and red pepper flakes, mixing them into the meat and vegetable mixture.
  6. Pour in the chicken broth and stir everything together. Bring to a light boil.
  7. Once boiling, cover and reduce the heat to low. Allow it to simmer for about 15-20 minutes until the rice is tender.
  8. Season with salt and pepper to your preference.
  9. Remove from heat, sprinkle cheese on top, cover for 2-3 minutes until melted.
  10. Serve over lettuce and garnish with your favorite toppings.
