Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey or ground beef
- 1/2 green pepper, diced
- 1/2 sweet onion, chopped
- 1/2 teaspoon garlic, minced
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can tomatoes with green chiles
- 2 cups chicken broth
- 1 cup minute brown rice
- 1 1/2 tablespoons taco seasoning
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 cup cheese (optional)
- Optional toppings: tortilla chips, salsa, lettuce, sour cream, guacamole, tomatoes, green onions, jalapeños
Instructions
- Heat the olive oil in a large pan over medium heat.
- Add the chopped onions, diced green peppers, and minced garlic to the pan. Sauté for about 2-3 minutes or until the onions turn golden brown.
- Add the ground turkey or ground beef to the pan. Cook until the meat is browned and drain any excess grease.
- Stir in the rinsed black beans, drained corn, and can of tomatoes with green chiles. Combine well.
- Add the minute brown rice, taco seasoning, and red pepper flakes, mixing them into the meat and vegetable mixture.
- Pour in the chicken broth and stir everything together. Bring to a light boil.
- Once boiling, cover and reduce the heat to low. Allow it to simmer for about 15-20 minutes until the rice is tender.
- Season with salt and pepper to your preference.
- Remove from heat, sprinkle cheese on top, cover for 2-3 minutes until melted.
- Serve over lettuce and garnish with your favorite toppings.
