Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until the onion is translucent.
  2. Stir in the orzo and dried thyme, cooking for 1-2 minutes until the orzo is lightly toasted.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes, or until the orzo is tender.
  4. Add broccoli florets and cook for an additional 3-5 minutes until they are tender.
  5. Remove from heat and stir in the shredded cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

For added richness, serve with extra cheese on top.
