These cookies blend the hearty texture of oats, creamy peanut butter, and sweet chocolate chips, creating a chewy and indulgent treat.
Ingredients
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (room temperature)
- 1/2 cup brown sugar (firmly packed)
- 1/2 cup granulated sugar
- 1/2 cup creamy peanut butter
- 1/2 teaspoon pure vanilla extract
- 1 large egg
- 2 cups old-fashioned rolled oats
- 1 cup chocolate chips
Instructions
- In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a stand mixer, cream the butter and both sugars on medium-high speed until combined.
- Add the peanut butter and continue mixing until light and fluffy, about 3-5 minutes.
- Scrape down the sides of the bowl and add the vanilla and egg. Mix until well combined.
- With the mixer on low, add the flour mixture and blend until just combined.
- Fold in the oats and chocolate chips.
- Chill the dough in the refrigerator for 45-60 minutes.
- Preheat the oven to 350°F (175°C).
- Prepare baking sheets with a silicone mat or parchment paper.
- Using a cookie scoop, place the dough on the sheets, spacing about 2 inches apart.
- Bake for 12-15 minutes until edges are lightly browned.
- Allow to cool on the pan for 5 minutes, then transfer to a cooling rack.
Notes
Store cookies in an airtight container for up to a week, or freeze for up to three months.
