Description

Quick and easy No Bake Peanut Butter Oat Cups made with wholesome ingredients for a healthier treat.


Ingredients

  • 1/2 cup natural honey
  • 1/3 cup natural, smooth peanut butter
  • 2 1/4 cups rolled oats
  • 1 tsp vanilla extract
  • 3/4 cup dark chocolate
  • 2 tsp coconut oil
  • Sea salt for garnish (optional)


Instructions

  1. In a mixing bowl, stir together the rolled oats, honey, peanut butter, and vanilla extract until all ingredients are evenly coated.
  2. Lightly grease a muffin tin and divide your oat mixture evenly among the muffin cups, pressing down firmly.
  3. In a microwave-safe bowl, combine dark chocolate and coconut oil. Heat until smooth and melted.
  4. Carefully spread the melted chocolate over the oat mixture in each muffin cup. Optional: sprinkle with sea salt.
  5. Place the muffin tin in the freezer for about 1 hour, or until set.
  6. Once firm, remove the cups from the muffin tin and store any leftovers in the fridge or freezer.
