Description

A hearty and comforting casserole combining tender chicken, savory mushrooms, and creamy Gruyere cheese over fluffy rice.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup Gruyere cheese, shredded
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Add the diced chicken and cook until browned through.
  4. Stir in the mushrooms and thyme, cooking for a few more minutes.
  5. In a large bowl, combine the cooked rice, chicken mixture, chicken broth, heavy cream, and half of the Gruyere cheese. Season with salt and pepper.
  6. Pour the mixture into a greased casserole dish.
  7. Top with the remaining Gruyere cheese.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Garnish with fresh parsley before serving.

Notes

Use leftover chicken for quicker prep, and adjust the creaminess to your taste. You can also add extra veggies for more nutrition.
