A hearty and comforting casserole combining tender chicken, savory mushrooms, and creamy Gruyere cheese over fluffy rice.
Ingredients
- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 cup mushrooms, sliced
- 1 cup Gruyere cheese, shredded
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Add the diced chicken and cook until browned through.
- Stir in the mushrooms and thyme, cooking for a few more minutes.
- In a large bowl, combine the cooked rice, chicken mixture, chicken broth, heavy cream, and half of the Gruyere cheese. Season with salt and pepper.
- Pour the mixture into a greased casserole dish.
- Top with the remaining Gruyere cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
Use leftover chicken for quicker prep, and adjust the creaminess to your taste. You can also add extra veggies for more nutrition.
