Ingredients
- 1 lb chicken breast, diced
- 1 cup couscous
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Add diced chicken, cumin, paprika, salt, and pepper. Cook until the chicken is golden brown and cooked through.
- In a separate saucepan, bring chicken broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a bowl, combine cooked couscous with cherry tomatoes, cucumber, bell pepper, red onion, and olives. Toss gently.
- Add the cooked chicken on top. Garnish with fresh parsley. Serve warm.
