Ingredients

  • 1 lb chicken breast, diced
  • 1 cup couscous
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced chicken, cumin, paprika, salt, and pepper. Cook until the chicken is golden brown and cooked through.
  2. In a separate saucepan, bring chicken broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. In a bowl, combine cooked couscous with cherry tomatoes, cucumber, bell pepper, red onion, and olives. Toss gently.
  4. Add the cooked chicken on top. Garnish with fresh parsley. Serve warm.
