A comforting and creamy chicken casserole perfect for busy weeknights or family gatherings, made with simple ingredients.
Ingredients
- 4½ cups chopped cooked chicken
- 4 oz cream cheese (room temperature)
- 1 cup cottage cheese
- ½ cup sour cream
- 1 (10.5 oz) can Unsalted Cream of Chicken Soup
- ¼ tsp garlic powder
- ¼ tsp dried onion powder
- 1 sleeve Ritz crackers (crushed)
- 5 Tbsp butter (melted)
Instructions
- Preheat the oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
- In a large bowl, combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix until well combined.
- Spread the chicken mixture into the prepared baking pan.
- In a separate bowl, combine the crushed Ritz crackers and melted butter. Sprinkle this mixture evenly over the chicken mixture.
- Bake uncovered for 30 to 40 minutes, or until the casserole is hot and bubbly.
Notes
For extra flavor, use leftover rotisserie chicken. Add vegetables like broccoli or peas for nutrition. Consider using Greek yogurt instead of cream cheese for a lighter version.
