Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Tortilla chips (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, black beans, corn, salsa, cumin, chili powder, garlic powder, and onion powder. Mix well.
- Place the mixture into a greased baking dish and spread evenly.
- Top with shredded cheese and crushed tortilla chips.
- Bake in the oven for 30 minutes until cheese is bubbly and golden.
- Allow to cool for a few minutes before serving.
Notes
For a spicier casserole, include diced jalapeños in the mixture. Feel free to customize the spices and add more vegetables for added nutrition.
