A hearty and refreshing Mediterranean Steak Bowl filled with vibrant flavors and wholesome ingredients, perfect for meal prep or busy weeknights.
Ingredients
- 1 lb sirloin steak
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 2 cups cooked grains (brown rice or quinoa)
- Cherry tomatoes, halved
- Cucumber, diced
- Red onion, thinly sliced
- Kalamata olives
- Tzatziki sauce (made from Greek yogurt, grated cucumber, dill)
Instructions
- In a bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak thoroughly with this mixture and allow it to marinate for at least 30 minutes.
- In a separate bowl, mix together Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper for the tzatziki. Refrigerate until ready to use.
- Heat a skillet over medium-high heat. Sear the marinated steak for about 4–5 minutes on each side, or until desired doneness, then let it rest before slicing.
- Layer the cooked grains at the bottom of a bowl, add the sliced steak, and top with cherry tomatoes, cucumber, red onion, Kalamata olives, and tzatziki sauce before serving.
Notes
Customize with your favorite vegetables or substitute steak with grilled tofu for a vegan version.
