Description

A quick and healthy dinner showcasing salmon and zesty lemon orzo, perfect for weeknights or gatherings.


Ingredients

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)


Instructions

  1. In a large skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper, then add to the skillet, cooking for 4-5 minutes on each side until cooked through. Remove from skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add orzo and vegetable broth to the skillet, bring to a boil, then reduce heat to a simmer. Cover and cook for about 10 minutes or until the orzo is tender.
  4. Stir in lemon zest, lemon juice, and season with salt and pepper to taste.
  5. Return the salmon to the skillet, allow to heat through, then serve garnished with fresh parsley.

Notes

Make sure the salmon is fresh for the best flavor. Don’t overcook the salmon; it should be flaky but not dry. Feel free to add more vegetables or herbs to the orzo for extra nutrition and flavor.
