Description
A delicious and nutritious meal that celebrates the best of Mediterranean cuisine, filled with salmon, soft-boiled eggs, avocado, and fresh vegetables.
Ingredients
- 1 salmon fillet
- 2 soft-boiled eggs
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- A handful of Kalamata olives
- 1–2 cups fresh greens (spinach, arugula, or mixed greens)
- 1 tbsp olive oil
- Salt & black pepper
- Optional: lemon juice, chili flakes
Instructions
- Season the salmon fillet with salt and black pepper. Heat olive oil in a skillet over medium heat and pan-sear the salmon for 4–5 minutes on each side until flaky and golden.
- Bring a small pot of water to a boil, add the eggs, and cook for 7 minutes for a soft center. Transfer to cold water, then peel and slice in half.
- Slice the cucumber and cherry tomatoes, cut the avocado into thin slices, and rinse the fresh greens.
- Layer fresh greens on a plate, and artfully arrange the salmon, soft-boiled eggs, olives, cherry tomatoes, cucumber, and avocado.
- Drizzle olive oil over the plate and sprinkle with black pepper. Squeeze lemon juice on top if desired.
Notes
Choose wild-caught salmon for better flavor and health benefits. Experiment with egg cooking time for desired yolk firmness.
