Description

A delightful salmon dish with a creamy sauce that’s perfect for romantic dinners.


Ingredients

  • 3-4 salmon fillets, skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock, unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sundried tomatoes
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • Fresh basil for garnish


Instructions

  1. Add seasonings (basil, garlic powder, onion powder, thyme, red pepper flakes, salt, black pepper) to a bowl and mix.
  2. Rub half the seasoning mix onto salmon fillets on both sides.
  3. Heat olive oil in a skillet over medium-high heat. Sear salmon for 5 minutes on each side, then remove and set aside.
  4. Add minced garlic and chopped sundried tomatoes to the skillet. Sauté for 1-2 minutes on low heat.
  5. Deglaze with chicken stock, scraping up any brown bits.
  6. Add heavy cream, parmesan cheese, and remaining seasoning mix. Combine well.
  7. Simmer on medium-low for 10-15 minutes until thickened. Adjust salt and pepper as needed.
  8. Return salmon to skillet, spoon sauce over it, and cook for an additional 3-5 minutes.
  9. Serve with fresh basil garnish.

Notes

Best served over rice or pasta to soak up the creamy sauce. Can include sautéed vegetables for added nutrition.
