A delightful salmon dish with a creamy sauce that’s perfect for romantic dinners.
Ingredients
- 3-4 salmon fillets, skin removed
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 3/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup chicken stock, unsalted
- 1/2 cup heavy cream
- 1/3 cup chopped sundried tomatoes
- 5 garlic cloves, minced
- 1/2 cup freshly shredded parmesan cheese
- Fresh basil for garnish
Instructions
- Add seasonings (basil, garlic powder, onion powder, thyme, red pepper flakes, salt, black pepper) to a bowl and mix.
- Rub half the seasoning mix onto salmon fillets on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear salmon for 5 minutes on each side, then remove and set aside.
- Add minced garlic and chopped sundried tomatoes to the skillet. Sauté for 1-2 minutes on low heat.
- Deglaze with chicken stock, scraping up any brown bits.
- Add heavy cream, parmesan cheese, and remaining seasoning mix. Combine well.
- Simmer on medium-low for 10-15 minutes until thickened. Adjust salt and pepper as needed.
- Return salmon to skillet, spoon sauce over it, and cook for an additional 3-5 minutes.
- Serve with fresh basil garnish.
Notes
Best served over rice or pasta to soak up the creamy sauce. Can include sautéed vegetables for added nutrition.
