Ingredients
- 1 lb boneless, skinless chicken breast
- ½ lb penne pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ½ cup sun-dried tomatoes
Instructions
- Season the chicken with salt and pepper to taste. In a large skillet, heat olive oil over medium-high heat and sear the chicken until browned, about 5 to 7 minutes. Set the chicken aside.
- In the same skillet, lower the heat to medium and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Sprinkle in flour and whisk for 1 to 2 minutes until well combined.
- Gradually whisk in the chicken broth and cream, stirring until the mixture thickens.
- Stir in the grated parmesan cheese until melted.
- Add the sun-dried tomatoes, smoked paprika, and Italian seasoning. Let everything simmer together.
- Return the chicken to the skillet while boiling the pasta according to package instructions. Once done, drain the pasta.
- Toss the cooked penne into the skillet, ensuring the pasta is well coated in the creamy sauce.
- Garnish with freshly chopped basil before serving.
