Ingredients

  • 1 lb boneless, skinless chicken breast
  • ½ lb penne pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup sun-dried tomatoes


Instructions

  1. Season the chicken with salt and pepper to taste. In a large skillet, heat olive oil over medium-high heat and sear the chicken until browned, about 5 to 7 minutes. Set the chicken aside.
  2. In the same skillet, lower the heat to medium and melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Sprinkle in flour and whisk for 1 to 2 minutes until well combined.
  4. Gradually whisk in the chicken broth and cream, stirring until the mixture thickens.
  5. Stir in the grated parmesan cheese until melted.
  6. Add the sun-dried tomatoes, smoked paprika, and Italian seasoning. Let everything simmer together.
  7. Return the chicken to the skillet while boiling the pasta according to package instructions. Once done, drain the pasta.
  8. Toss the cooked penne into the skillet, ensuring the pasta is well coated in the creamy sauce.
  9. Garnish with freshly chopped basil before serving.
