Description

A delightful mix of sweet mango and spicy chili peppers, perfect for spreading or enhancing various dishes.

Ingredients

  • 4 cups ripe mango, peeled and finely diced
  • 2 cups granulated sugar
  • 12 red chili peppers (or Fresno peppers), finely minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1 packet (1.75 oz) powdered fruit pectin

Instructions

  1. Add diced mango, sugar, chili peppers, lime juice, and lime zest to a large saucepan.
  2. Stir well and let sit for 5 minutes to release the mango juices.
  3. Bring the mixture to a rolling boil over medium-high heat, stirring frequently.
  4. Stir in the pectin and continue boiling for 10–15 minutes until thickened and glossy.
  5. Skim off any foam from the surface.
  6. Test the jam by placing a spoonful on a chilled plate — it should wrinkle slightly when pushed.
  7. Remove from heat and allow to cool slightly.
  8. Transfer to clean jars and refrigerate up to 3 weeks, or process for long-term canning.

Notes

Choose ripe mangoes for best flavor. Adjust chili pepper to taste for desired spiciness.
