A delightful and nutritious low-carb chicken casserole perfect for busy weeknights.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower, steamed and chopped
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken, broccoli, cauliflower, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, mix the heavy cream with half of the cheese.
- Combine both mixtures and pour into a greased casserole dish.
- Top with the remaining cheese.
- Bake for 25-30 minutes or until bubbly and golden.
- Allow to cool slightly before serving.
Notes
Use pre-cooked chicken for faster prep. Adjust seasonings for personal preference.
