Description
A chilled twist on baked potatoes, this salad is loaded with sour cream, cheddar, green onions, and crispy bacon, perfect for potlucks and barbecues.
Ingredients
- 3 large potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese
- 4 strips smoked turkey bacon, cooked and crumbled
- 3 green onions, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes until fork-tender, about 15-25 minutes depending on size.
- Cool the potatoes, then peel and chop into bite-sized pieces.
- In a large bowl, combine sour cream and mayonnaise.
- Add the chopped potatoes to the bowl and gently mix to coat.
- Stir in the shredded cheddar, crumbled bacon, and chopped green onions.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For lighter options, swap mayo for Greek yogurt and use reduced-fat sour cream. For a vegetarian version, use smoked mushrooms or tempeh bacon instead of turkey bacon.
