Ingredients
- 2 cups pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 1 tablespoon olive oil
- Pumpkin seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the chopped onion and garlic with olive oil and roast for 20 minutes.
- In a pot, combine the roasted onion and garlic, pumpkin puree, vegetable broth, cumin, and cinnamon.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Blend the soup until smooth, adding salt and pepper to taste.
- Serve hot, garnished with pumpkin seeds.
Notes
Enhance flavors by roasting onion and garlic until golden. For creamier soup, add coconut milk or cream when blending. Adjust spices to preference.
