A heartwarming and nutritious soup that blends lentils with orzo pasta, perfect for any meal.
Ingredients
- 1 cup lentils, rinsed and drained
- 1/2 cup orzo pasta
- 1 tablespoon olive oil
- 1 chopped onion
- 2 minced garlic cloves
- 2 diced carrots
- 2 diced celery stalks
- One 14.5 oz can diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened.
- Add minced garlic, diced carrots, and diced celery; cook for about 5 minutes until tender.
- Stir in lentils, orzo, diced tomatoes, vegetable broth, dried thyme, and dried oregano.
- Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until lentils and orzo are tender.
- Season with salt and pepper to taste and serve hot, garnished with chopped parsley.
Notes
For a thicker soup, let it simmer longer or add more lentils. For a thinner consistency, add an extra cup of vegetable broth.
