Description

A heartwarming and nutritious soup that blends lentils with orzo pasta, perfect for any meal.


Ingredients

  • 1 cup lentils, rinsed and drained
  • 1/2 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 diced carrots
  • 2 diced celery stalks
  • One 14.5 oz can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened.
  2. Add minced garlic, diced carrots, and diced celery; cook for about 5 minutes until tender.
  3. Stir in lentils, orzo, diced tomatoes, vegetable broth, dried thyme, and dried oregano.
  4. Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until lentils and orzo are tender.
  5. Season with salt and pepper to taste and serve hot, garnished with chopped parsley.

Notes

For a thicker soup, let it simmer longer or add more lentils. For a thinner consistency, add an extra cup of vegetable broth.
