Description
A delightful Mediterranean dish featuring crispy roasted potatoes, zesty lemon, and creamy feta cheese.
Ingredients
- 2 lbs (900 g) potatoes, peeled and cut into wedges
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon juice and zest, dried oregano, salt, and black pepper until well coated.
- Spread the potato wedges in a single layer on a baking sheet.
- Roast the potatoes for about 35–40 minutes, turning halfway through, until golden and crispy.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Garnish with freshly chopped parsley and serve warm.
Notes
For best results, use starchy potatoes like Russets or Yukon Golds. Feel free to tweak seasonings to taste.
