Description

A delightful Mediterranean dish featuring crispy roasted potatoes, zesty lemon, and creamy feta cheese.


Ingredients

  • 2 lbs (900 g) potatoes, peeled and cut into wedges
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon juice and zest, dried oregano, salt, and black pepper until well coated.
  3. Spread the potato wedges in a single layer on a baking sheet.
  4. Roast the potatoes for about 35–40 minutes, turning halfway through, until golden and crispy.
  5. Remove from the oven and sprinkle crumbled feta cheese on top.
  6. Garnish with freshly chopped parsley and serve warm.

Notes

For best results, use starchy potatoes like Russets or Yukon Golds. Feel free to tweak seasonings to taste.
