Ingredients
- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 lemon, juiced and zested
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the baby potatoes, olive oil, lemon juice, lemon zest, garlic powder, oregano, salt, and pepper. Toss to coat the potatoes evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for about 30-35 minutes, or until golden brown and fork-tender, stirring halfway through.
- Once the potatoes are roasted, remove them from the oven and sprinkle the crumbled feta cheese and chopped parsley over the top.
