Description

Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the baby potatoes, olive oil, lemon juice, lemon zest, garlic powder, oregano, salt, and pepper. Toss to coat the potatoes evenly.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 30-35 minutes, or until golden brown and fork-tender, stirring halfway through.
  5. Once the potatoes are roasted, remove them from the oven and sprinkle the crumbled feta cheese and chopped parsley over the top.
