Description

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into 1.5-inch pieces
  • Salt and pepper, to taste
  • 1 teaspoon Asian five spice (optional)
  • 3 green onions, finely chopped
  • Steamed rice or cooked noodles for serving (optional)
  • 1/2 cup low sodium soy sauce
  • 1/3 cup brown sugar
  • 4 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon sriracha sauce or 1 teaspoon crushed red pepper flakes
  • 1 tablespoon minced garlic
  • 2 tablespoons cold water
  • 2 teaspoons corn starch


Instructions

  1. Prepare the BBQ sauce: In a medium saucepan over medium-high heat, stir together soy sauce, brown sugar, rice vinegar, sesame oil, sriracha, and minced garlic. Bring to a boil. In a small bowl, stir together cold water and corn starch until dissolved, then stir this mixture into the boiling sauce. Remove from heat and divide between two bowls, reserving one for serving later.
  2. Prepare the chicken: Skewer chicken onto metal or soaked wooden skewers. Season the chicken pieces with salt, pepper, and Asian five spice if using. Brush the chicken with the BBQ sauce from one bowl. Grill the skewers over medium heat for 8-10 minutes, turning periodically while brushing with additional BBQ sauce.
  3. Serve: Once cooked, serve the grilled chicken over steamed rice or cooked noodles, garnished with the finely chopped green onions and drizzle the reserved BBQ sauce on top.

Notes

For deeper flavors, marinate the chicken in the BBQ sauce for a few hours or overnight. Always ensure chicken reaches an internal temperature of 165°F (75°C).
