Description

Perfect for those on a keto diet, these delicious crunchwraps combine rich flavors and textures while keeping carb intake low.


Ingredients

  • 2 tablespoons Butter (Unsalted)
  • 4 ounces Cream Cheese (or dairy-free cream cheese)
  • 1/4 cup Heavy Whipping Cream (or coconut cream)
  • 1 cup Shredded Cheddar Cheese (sharp cheddar preferred)
  • 1 pound Ground Beef (or ground chicken/turkey)
  • 2 tablespoons Taco Seasoning (homemade or low-sodium)
  • 4 Low-Carb Tortillas (Mission Carb Balance or almond flour)
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Lettuce (shredded iceberg or romaine)
  • 1 medium Tomato (or bell peppers)
  • 1 cup Extra Cheddar Cheese (consider pepper jack for spice)
  • 1/4 cup Cilantro (or parsley)
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil (or any cooking oil)


Instructions

  1. In a saucepan, melt butter over medium heat. Add cream cheese, stirring until melted. Gradually add heavy whipping cream while stirring continuously until smooth.
  2. Add shredded cheddar cheese to the mixture and stir until melted. Remove from heat and set aside.
  3. In a skillet over medium heat, heat olive oil. Add ground beef, breaking it apart. Cook until browned, about 7-10 minutes.
  4. Sprinkle taco seasoning over the beef and mix well, cooking for another 2-3 minutes.
  5. Lightly toast the low-carb tortillas in a separate pan for about 30 seconds on each side until slightly crispy.
  6. On a flat surface, place a crispy tortilla and spread a layer of cheese sauce. Top with seasoned ground beef, a dollop of sour cream, lettuce, diced tomato, extra cheddar cheese, cilantro, and jalapeño slices if desired.
  7. Add another tortilla on top and press down gently.
  8. In the skillet used for beef, place the assembled crunchwraps seam side down and cook for 3-4 minutes on each side until golden and crispy.
  9. Allow to cool slightly before cutting in half to serve warm.
