A delicious twist on the classic Italian dish, Keto Chicken Parmesan is low in carbohydrates and rich in flavor, perfect for a ketogenic diet.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 eggs
- 1 cup marinara sauce (sugar-free)
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Beat the eggs in another bowl.
- Dip each chicken breast in the egg, then coat with the almond flour mixture.
- Place the coated chicken on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until the chicken is cooked through.
- Remove from the oven, top each breast with marinara sauce and mozzarella cheese.
- Return to the oven and bake until the cheese is melted, about 5-10 minutes.
- Garnish with fresh basil if desired, and serve.
Notes
For extra crunch, double dip the chicken in the egg and then the almond flour mixture. Experiment with different cheeses or spices for extra flavor.
