Ingredients
- 1 cup butter, softened
- 1 cup granulated erythritol
- 4 large eggs
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, cream together the softened butter and erythritol until fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the almond flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until well combined.
- Fold in the chopped pecans.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
