Ingredients

  • 1 cup butter, softened
  • 1 cup granulated erythritol
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and erythritol until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the almond flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until well combined.
  5. Fold in the chopped pecans.
  6. Pour the batter into the prepared cake pan and smooth the top.
