Ingredients
- 1 cup almond flour
- 1/2 cup unsalted butter, softened
- 1/4 cup erythritol or preferred sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and erythritol until smooth.
- Add the egg and vanilla extract, and mix well.
- In another bowl, combine almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper. Flatten each ball slightly.
- Bake for 10-12 minutes, or until the edges are golden.
- Allow to cool before serving.
Notes
For added sweetness, you can dust with powdered erythritol on top before serving. Store in an airtight container for up to a week.
