Description

Delicious keto-friendly cookies made with almond flour and erythritol, perfect for satisfying sweet cravings.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup erythritol or preferred sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and erythritol until smooth.
  3. Add the egg and vanilla extract, and mix well.
  4. In another bowl, combine almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper. Flatten each ball slightly.
  7. Bake for 10-12 minutes, or until the edges are golden.
  8. Allow to cool before serving.

Notes

For added sweetness, you can dust with powdered erythritol on top before serving. Store in an airtight container for up to a week.
