Description

Ingredients

  • 3-4 lb beef chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 packet French onion soup mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the roast with salt and pepper.
  3. In a large oven-proof pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. Remove the roast and set aside.
  5. In the same pot, add onions and cook until softened, about 5-7 minutes.
  6. Add garlic and cook for an additional minute.
  7. Stir in the beef broth and French onion soup mix.
  8. Return the roast to the pot, cover it, and place it in the oven.
  9. Cook for 3-4 hours, or until fork-tender.
  10. Serve garnished with fresh thyme if desired.

Notes

For added flavor, consider marinating the roast overnight with the broth and soup mix. Brown the roast well for deeper flavor. To thicken the sauce, simmer after removing the roast.
