Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup kale or spinach, chopped
  • 1 lemon, juiced


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the vegetable broth, chopped carrots, chopped celery, dried thyme, dried oregano, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 20-30 minutes or until the vegetables are tender.
  6. Stir in the chopped kale or spinach and lemon juice. Cook for an additional 5 minutes.
  7. Serve warm and enjoy.
