Italian Chicken Meatloaf

Description

A lighter twist on classic meatloaf, packed with Italian flavors, cheese, and marinara sauce.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Spread marinara sauce over the top of the meatloaf.
  5. Top with additional breadcrumbs if desired.
  6. Bake for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Allow to cool slightly before slicing and serving.

Notes

Make sure to mix the ingredients well but do not overmix. For added moisture, consider adding a couple of tablespoons of milk to the mixture. Don’t skip the marinara sauce on top.
