Description
A lighter twist on classic meatloaf, packed with Italian flavors, cheese, and marinara sauce.
Ingredients
- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup marinara sauce
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a greased baking dish.
- Spread marinara sauce over the top of the meatloaf.
- Top with additional breadcrumbs if desired.
- Bake for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
- Allow to cool slightly before slicing and serving.
Notes
Make sure to mix the ingredients well but do not overmix. For added moisture, consider adding a couple of tablespoons of milk to the mixture. Don’t skip the marinara sauce on top.
