Description

Deliciously unique Carrot Cake Cream Cheese Bars combining the flavors of carrot cake with a rich cream cheese layer.


Ingredients

  • 1 cup light brown sugar
  • 0.5 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, ground cinnamon, ground nutmeg, baking powder, kosher salt, and light brown sugar.
  3. Melt the unsalted butter and allow it to cool slightly, then whisk together with the large egg and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Gently fold in the freshly grated carrots.
  6. In a separate bowl, beat the softened cream cheese, granulated sugar, and egg yolk until smooth and creamy.
  7. Pour the carrot cake batter into the prepared baking pan, dolloping the cream cheese mixture on top and swirling them together gently.
  8. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan before slicing into squares.
