Description

Ingredients

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach
  • 1 cup Shredded Mozzarella Cheese


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Finely chop the spinach and squeeze out excess moisture.
  3. In a food processor, combine the cottage cheese, olive oil, and egg. Pulse until mostly smooth.
  4. Add the flour, baking powder, and salt; pulse until the dough is sticky but manageable.
  5. Transfer the dough to a bowl and fold in the spinach and mozzarella until evenly distributed.
  6. Lightly flour your hands and form the dough into 6-8 equal pieces, shaping each into a flattened ring.
  7. Place flagels on the baking sheet. Brush with olive oil and sprinkle with salt.
  8. Bake for 12-16 minutes until golden brown and cooked through.
  9. Remove from the oven and cool for 5 minutes on the sheet before transferring to a wire rack. Serve warm or at room temperature.

Notes

For added flavor, consider adding minced garlic or onion powder to the dough. Feel free to experiment with different cheeses.
