Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 cups assorted vegetables (e.g., broccoli, carrots, bell peppers)
- Chopped fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Place the chicken breasts on a sheet pan and brush the honey mustard mixture over them.
- Arrange the assorted vegetables around the chicken on the sheet pan.
- Drizzle any remaining honey mustard mixture over the vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with chopped fresh parsley before serving.
Notes
For more flavor, marinate the chicken in the honey mustard mixture for a few hours before cooking. Substitute honey with maple syrup for a unique taste.
