Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4 cups assorted vegetables (e.g., broccoli, carrots, bell peppers)
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Place the chicken breasts on a sheet pan and brush the honey mustard mixture over them.
  4. Arrange the assorted vegetables around the chicken on the sheet pan.
  5. Drizzle any remaining honey mustard mixture over the vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Garnish with chopped fresh parsley before serving.
