Ingredients
- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 cup jasmine rice
- 1 cup coconut milk
- 1/2 cup water
- 1 ripe mango, diced
- 1 avocado, diced
- 2 tablespoons fresh cilantro, chopped
Instructions
- In a mixing bowl, whisk together the honey, lime juice, olive oil, minced garlic, salt, and black pepper until well combined.
