Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 2 tablespoons fresh cilantro, chopped


Instructions

  1. In a mixing bowl, whisk together the honey, lime juice, olive oil, minced garlic, salt, and black pepper until well combined.
  2. Add the chicken breasts to the bowl, ensuring they are fully coated with the marinade. Let it sit while preparing the rice.
