Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3 to 4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In a bowl, mix BBQ sauce, honey, soy sauce, and minced garlic.
- In the same skillet, toast uncooked rice for 1 to 2 minutes until slightly golden.
- Pour in chicken broth and half of the BBQ sauce mixture, stirring to combine.
- Return the chicken to the pan and drizzle with the remaining BBQ sauce. Cover and simmer on low heat for about 15 minutes.
- If using mixed vegetables, add them now, cover, and cook for an additional 5 minutes until the rice is tender and chicken is cooked.
- Let the dish rest for 5 minutes, garnish with chopped green onions, and serve hot.
