Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3 to 4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. In a bowl, mix BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same skillet, toast uncooked rice for 1 to 2 minutes until slightly golden.
  5. Pour in chicken broth and half of the BBQ sauce mixture, stirring to combine.
  6. Return the chicken to the pan and drizzle with the remaining BBQ sauce. Cover and simmer on low heat for about 15 minutes.
  7. If using mixed vegetables, add them now, cover, and cook for an additional 5 minutes until the rice is tender and chicken is cooked.
  8. Let the dish rest for 5 minutes, garnish with chopped green onions, and serve hot.
