Ingredients

  • 4 medium potatoes, diced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. In a large pot, bring water to a boil and add the diced potatoes. Cook until tender, about 15 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add broccoli, carrots, and red bell pepper; sauté for about 5-7 minutes until tender.
  3. Add cooked potatoes to the skillet. Sprinkle garlic powder, onion powder, salt, and pepper. Stir to combine.
  4. If using, sprinkle shredded cheese on top and let it melt for a minute.
  5. Garnish with fresh parsley before serving and enjoy!
