Ingredients
- 1 pound ground turkey or lean ground beef (93% lean or higher)
- 1 cup cooked brown rice or quinoa
- 1 green bell pepper, diced
- 1 cup diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cheese for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground turkey or beef in a large skillet over medium heat until browned.
- Add the diced onion and garlic; sauté until softened.
- Stir in the diced green bell pepper, cooked rice or quinoa, diced tomatoes, Italian seasoning, salt, and pepper.
- Cook for 5-7 minutes until heated through.
- Transfer the mixture to a baking dish.
- If desired, sprinkle cheese on top.
- Bake for 20-25 minutes until everything is heated through and the cheese is melted.
- Serve warm.
