Ingredients
- 1 cup full-fat cottage cheese
- 1 lb ground beef or turkey (93/7 lean recommended)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 can diced green chiles (4 oz)
- 1/2 cup enchilada sauce (low sugar)
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- Toppings: diced tomatoes, avocado, cilantro, sour cream, jalapenos (as desired)
Instructions
- Heat olive oil in a large 12-inch skillet over medium-high heat until it shimmers.
- Add the ground beef or turkey and cook for 6-8 minutes until fully browned. Drain any excess fat if using higher-fat ground meat.
- Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté for 3-4 minutes until the onion turns translucent and the pepper softens.
- Stir in the diced green chiles, enchilada sauce, cumin, chili powder, paprika, salt, and black pepper. Reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally.
- Add the cottage cheese and stir until completely incorporated and heated through, about 2-3 minutes.
- Divide the mixture between four serving bowls and top immediately with shredded cheddar cheese.
- Add toppings like diced tomatoes, avocado, cilantro, sour cream, or jalapenos as desired.
