A warm and comforting Herbed Potato Soup that combines creamy potatoes with fresh herbs for a delightful flavor.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or milk
- 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley), chopped
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and stir for a few minutes.
- Pour in the broth and bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender or transfer to a blender to puree the soup until smooth.
- Return the puree to the pot, stir in the cream or milk, and add chopped herbs.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional fresh herbs if desired.
Notes
For richer flavor, roast the potatoes before adding them to the soup. Adjust thickness by varying cream or milk. Experiment with different herbs.
