Ingredients
- 1 rotisserie chicken, shredded
- 1 package gnocchi
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup spinach
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced onion, carrots, and celery; sauté until softened, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the gnocchi and cook according to the package instructions, usually around 2-3 minutes.
- Stir in the shredded rotisserie chicken and spinach, then cook until the spinach wilts.
- Season with salt and pepper to taste.
- Serve warm in bowls and enjoy!
Notes
For optimal freshness, store any leftover soup in an airtight container in the refrigerator for up to three days. When reheating, add a touch more broth or water as the gnocchi can absorb liquid.
