Ingredients

  • 1 rotisserie chicken, shredded
  • 1 package gnocchi
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the gnocchi and cook according to the package instructions, usually around 2-3 minutes.
  6. Stir in the shredded rotisserie chicken and spinach, then cook until the spinach wilts.
  7. Season with salt and pepper to taste.
