Ingredients

  • 1 cup rolled oats
  • 1 ripe banana
  • 1 cup applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • Cooking spray or oil for frying


Instructions

  1. In a blender, combine the rolled oats, ripe banana, applesauce, baking powder, cinnamon, eggs, and vanilla extract. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes on one side until small bubbles form, then flip and cook for another 2 minutes until golden brown.
  5. Serve warm with maple syrup or fresh fruit.

Notes

For best results, use a ripe banana for natural sweetness and don’t overmix the batter.
