Ingredients

  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Cook quinoa according to package instructions.
  5. Place the marinated chicken on a baking sheet and surround it with broccoli florets.
  6. Bake for 20-25 minutes, or until the chicken is cooked through.
  7. In the last 5 minutes of baking, add the cherry tomatoes.
  8. Once done, let the chicken rest for a few minutes before slicing.
  9. Assemble meal prep bowls with quinoa, sliced chicken, roasted broccoli, and tomatoes.
  10. Garnish with fresh parsley and enjoy!
