Description

Elevate your potato game with delicious Hasselback Potatoes that are crispy on the outside and fluffy on the inside, perfect for any meal.


Ingredients

  • 2 medium russet potatoes (about 6″ in length)
  • 1 tbsp bacon fat or olive oil
  • 1/2 tsp kosher salt
  • 2 tbsp herbs of choice (such as thyme or parsley)
  • 2 tbsp melted butter or olive oil to baste


Instructions

  1. Preheat the oven to 425°F.
  2. Line a baking sheet with aluminum foil, parchment paper, or use a baking stone.
  3. Rub the potatoes all over with bacon fat or olive oil and sprinkle with kosher salt.
  4. Carefully slice off a thin portion on one side of the potato and set it aside.
  5. Place the potato on the flat cut side and position chopsticks or wooden spoons on either side of the potato lengthwise.
  6. Make 1/8” thick slices, cutting down to the chopstick or spoon to avoid cutting all the way through the potato.
  7. Place the potato slice flat side down on the lined baking tray.
  8. Mince the chosen herbs and mix them with the melted butter and any additional seasoning.
  9. Brush the potato and between the slices with the herb-infused butter.
  10. Season with kosher salt and fresh cracked pepper.
  11. Bake for 30 minutes, baste with additional butter, and continue baking for another 20 minutes until crispy and golden brown.
  12. Top with remaining butter and fresh herbs before serving.

Notes

For added flavor, experiment with toppings like cheese, garlic, or bacon bits. Store leftovers in the fridge for up to three days.
