Ingredients
- 1 pound lean ground beef (90% lean or higher)
- 2 large sweet potatoes, peeled and diced into ½-inch cubes
- 1 medium yellow onion, chopped
- 1 bell pepper, cored, seeded, and chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper (adjust to taste)
- ½ cup low sodium chicken broth
- Optional garnishes: fresh parsley or cilantro, chopped; green onions, sliced; shredded cheese; sour cream or Greek yogurt; avocado slices
Instructions
- Prep all vegetables: peel and dice sweet potatoes, chop onion and bell pepper, mince garlic.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, draining excess grease.
- Add onion and bell pepper to the skillet, cooking until softened, about 5-7 minutes. Then, add minced garlic and cook for 1 more minute.
- Introduce diced sweet potatoes, spices, and toss to coat. Stir in chicken broth and bring to a simmer.
- Reduce heat, cover skillet, and simmer for 15-20 minutes or until sweet potatoes are tender. Adjust seasoning if needed.
- Remove the lid, increase the heat to medium-high to evaporate excess liquid if necessary.
- Serve and garnish with your choice of toppings.
