Ingredients

  • 1 pound lean ground beef (90% lean or higher)
  • 2 large sweet potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, chopped
  • 1 bell pepper, cored, seeded, and chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper (adjust to taste)
  • ½ cup low sodium chicken broth
  • Optional garnishes: fresh parsley or cilantro, chopped; green onions, sliced; shredded cheese; sour cream or Greek yogurt; avocado slices


Instructions

  1. Prep all vegetables: peel and dice sweet potatoes, chop onion and bell pepper, mince garlic.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, draining excess grease.
  3. Add onion and bell pepper to the skillet, cooking until softened, about 5-7 minutes. Then, add minced garlic and cook for 1 more minute.
  4. Introduce diced sweet potatoes, spices, and toss to coat. Stir in chicken broth and bring to a simmer.
  5. Reduce heat, cover skillet, and simmer for 15-20 minutes or until sweet potatoes are tender. Adjust seasoning if needed.
  6. Remove the lid, increase the heat to medium-high to evaporate excess liquid if necessary.
  7. Serve and garnish with your choice of toppings.
