Ingredients
- 3 cloves garlic, finely chopped
- 1/4 cup balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons brown sugar
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 4 (6- to 8-oz.) boneless, skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- Chopped fresh parsley, for serving
Instructions
- Whisk together the garlic, balsamic vinegar, extra-virgin olive oil, brown sugar, dried rosemary, and dried thyme in a medium bowl. Generously season the mixture with kosher salt and freshly ground black pepper. Reserve 1/4 cup of this marinade for grilling later.
- Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate it for at least 20 minutes, or up to overnight for more flavor.
- Preheat your grill to medium-high heat for about 5 minutes.
- Grill the marinated chicken breasts, basting them with the reserved marinade and turning halfway through, until an instant-read thermometer inserted into the thickest part of the chicken registers 165°F. This should take about 6 minutes per side.
- Transfer the chicken to a platter and top it with chopped fresh parsley for garnish before serving.
Notes
For extra flavor, marinate the chicken overnight. Ensure to let it rest for a few minutes after grilling before slicing.
