Description
A healthy and delicious Greek Chicken Bowl, featuring juicy chicken, fresh vegetables, and creamy tzatziki sauce.
Ingredients
- 1 lb chicken breast, diced
- 2 cups cooked quinoa or brown rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 cup red onion, diced
- 1 bell pepper, diced
- 2 cups spinach or mixed greens
- 1/2 cup feta cheese, crumbled
- Olive oil
- Salt and pepper to taste
- For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 1 clove garlic (minced)
- 1 tablespoon lemon juice
- Dill (fresh or dried) to taste
Instructions
- Season chicken with olive oil, salt, and pepper. Cook in a skillet over medium heat until golden and cooked through.
- In a bowl, combine cooked quinoa or rice with fresh veggies (cucumber, tomatoes, onion, bell pepper, spinach).
- Prepare the tzatziki sauce by mixing yogurt, grated cucumber, garlic, lemon juice, and dill in a separate bowl. Refrigerate for at least 30 minutes.
- Assemble bowls by adding chicken and veggie mixture; top with tzatziki sauce and crumbled feta cheese.
- Serve immediately or store in meal prep containers for later.
Notes
Store in airtight containers in the refrigerator for up to three days. Reheat in the microwave, adding fresh tzatziki sauce when ready to serve.
