Ingredients
- 2 cups cooked quinoa or brown rice
- 2 cups cooked chicken, shredded or diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- Fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving
- For the tzatziki sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked quinoa or brown rice, shredded or diced chicken, cherry tomatoes, diced cucumber, diced bell pepper, diced red onion, sliced Kalamata olives, and crumbled feta cheese. Mix gently until combined.
- In a separate bowl, prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper. Stir well to combine all the ingredients thoroughly.
- Serve the Greek Chicken Bowls topped with tzatziki sauce and a sprinkle of fresh parsley. Don’t forget to add lemon wedges on the side for an extra burst of flavor. Enjoy!
