Description

A straightforward and beginner-friendly recipe for making fresh homemade pasta.


Ingredients

  • 2 cups (240g) all-purpose flour, spooned & leveled
  • 3 large eggs
  • ½ tsp sea salt
  • ½ Tbsp extra-virgin olive oil


Instructions

  1. On a clean surface, pile the flour and form a well in the center. Add eggs, olive oil, and salt into the well.
  2. Use a fork to slowly incorporate the flour into the eggs, then mix with hands until a shaggy dough forms.
  3. Knead for 8–10 minutes until smooth. Add a few drops of water if too dry, or dust with flour if sticky.
  4. Shape into a ball, wrap in plastic wrap, and let rest for 30 minutes at room temperature.
  5. Cut into 4 pieces. Flatten one piece into a small oval.
  6. Pass through a pasta machine on setting 1 three times. Fold into thirds, then roll again through settings 2 and 3 (three times each), and then once on settings 4, 5, and 6.
  7. Lay on a floured baking sheet. Dust with flour and fold lightly. Repeat with remaining dough.
  8. Use a cutter to shape as desired (e.g., fettuccine).
  9. Boil in salted water for 1–2 minutes until al dente. Drain and serve immediately.

Notes

Use high-quality flour for the best texture. Knead the dough adequately for structure and don’t rush the resting time.
