Ingredients
- 4 cod fillets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup olives, sliced
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- Place the cod fillets in a baking dish and pour the lemon garlic mixture over the top.
- Scatter the cherry tomatoes and olives around the cod.
- Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
