Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Set this dry mixture aside.
  3. In a separate large bowl, beat the softened butter with the brown sugar and granulated sugar until creamy.
  4. Add the egg, molasses, and vanilla extract to the butter mixture, mixing until fully combined.
  5. Gradually add the flour mixture to the wet ingredients, stirring until a cohesive dough forms.
  6. In another bowl, mix softened cream cheese with powdered sugar until smooth and creamy.
  7. Scoop a tablespoon of dough, flatten it, and place a teaspoon of cheesecake filling in the center, then wrap the dough around the filling to form a ball.
  8. Roll each ball in a mixture of granulated sugar and cinnamon.
  9. Arrange on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
