Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar (for rolling)
- 1 teaspoon ground cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix together the flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Set this dry mixture aside.
- In a separate large bowl, beat the softened butter with the brown sugar and granulated sugar until creamy.
- Add the egg, molasses, and vanilla extract to the butter mixture, mixing until fully combined.
- Gradually add the flour mixture to the wet ingredients, stirring until a cohesive dough forms.
- In another bowl, mix softened cream cheese with powdered sugar until smooth and creamy.
- Scoop a tablespoon of dough, flatten it, and place a teaspoon of cheesecake filling in the center, then wrap the dough around the filling to form a ball.
- Roll each ball in a mixture of granulated sugar and cinnamon.
- Arrange on a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
