Description
A comforting and nutritious one-pan dish featuring lentils and rice with the robust flavor of garlic.
Ingredients
- 1 cup Brown or Green Lentils
- 1 cup Long-Grain Rice
- 4 cloves Garlic, finely minced
- 1 small Onion, chopped
- 3 cups Vegetable Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- ½ teaspoon Turmeric
- Salt, to taste
- Black Pepper, to taste
- Fresh Parsley or Cilantro, chopped, to taste
- Lemon Wedges, to taste
- Red Chili Flakes, to taste
Instructions
- Rinse the lentils under cold water to remove any debris and set aside.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rinsed lentils, rice, cumin, paprika, turmeric, salt, and black pepper. Mix thoroughly to coat the lentils and rice with spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes until lentils and rice are cooked and liquid is absorbed.
- Remove from heat and let sit covered for an additional 5 minutes to fluff the rice.
- Garnish with chopped parsley or cilantro, sprinkle with red chili flakes, and serve with lemon wedges.
Notes
Choose brown or green lentils that hold their shape well. Rinse the rice to remove excess starch for fluffier grains.
